Curing of the Vines

Special attention paid to caring for the young plants in the months before darkening, the yield is assessed before harvesting. The grapes are selected based on their maturation components sugar content and acidity

Vinification
Removal of the stalks and crushing ; the wine is left to macerate for 8 - 9 hours in the press at 8°C, followed by cold soft pressing and settling of the must. Fermentation is at 16 - 18°C for 16 days. The Blend of wine is done at the end of fermentation respecting Production Discipline
Ageing
In stainless steel vats at 8°C for 6 months
